40 Knots Spindrift Brut 2012

Comox Valley, Vancouver Island, British Columbia, CanadaSpindrift Brut is made using the traditional French method mixing pinot noir and chardonnay. The attack is aggressively fresh and acidic with bright citrus note and green apple, pear skin and grassy notes. The attack is lean and juicy with an intensely dry, acidic finish. This requires oysters to temper the acidity. Right on the edge of drinkability but much better at the tart dry end of the spectrum than the sweet end.
