Glaetzer Bishop Shiraz 2014

Barossa Valley, South Australia, AustraliaWinemaker Ben Glaetzer pulls from 90 to 95-year-old, dry farmed shiraz vines for his Bishop. The fruit is aged in mostly French barrels of which about 40 percent are new each year. Open top fermenters and hand plunging 2-3 times per day adds a softness to his wines that makes them more approachable in their youth. Look for the signature Ebenezer style, opulent dark fruit with a savoury spicy undercurrent. The attack is fresh, the acidity in check with supple, velvety tannins awash in black cherry, creamy blueberry, red licorice fruit.
