Okanagan Falls, Okanagan Valley, British Columbia, CanadaThis frothy, shearing fizz is a blend of chardonnay and pinot noir from two different vintages. The 2014 pinot was whole cluster pressed and fermented before resting on lees for 15 months, while chardonnay and pinot noir from the 2015 vintage were harvested, whole cluster pressed and fermented separately. The whole was then blended, underwent injection and into a pressurized tank for a week at low temperatures. The prosecco-styled result carries a bit of pear skin and crab apple, with a whiff of florals hidden within the toast.
