Paolo Scavino Barolo Classico 2012

Castiglione Falletto, Cuneo, Piedmont, ItalyPaolo Scavino was founded in 1921, and the family run estate today is in the hand of the forth and fifth generations, Enrico Scavino and his two daughters Enrica and Elisa who farm and produce low-intervention, finessed wines. The Classico is from a selection of the crus from varying altitudes and soils on the estate, and each plot separately spent ten months in neutral French before an additional year in large casks prior to blending. When the wine is united, it spends an additional year in stainless and ten months of bottle aging before release. They do to the work for you. Classic aromas of dried roses drift onto the anise and dried cherry palate, floating on the fine veil of tar, tugged with firm tannins. Textural and lighter with a lingering subtle truffle.
