Haywire Waters and Banks Sauvignon Blanc 2016

Summerland, Okanagan Valley, British Columbia, CanadaThis Haywire white is named after Summerland vineyard owners Terry Waters and Cathy Banks' three hectare Trout Creek Canyon vineyard. The soil substructure is a mix of rich limestone and granite and the site is currently in year three of its transition to certified organic. The grapes are whole bunch pressed and fermented with native yeast and despite the bright acidity, it goes through a full malolactic fermentation in concrete tanks before spending seven months on its gross lees with no racking. As Treve would say “lemon thistle” and desert herbs mark the nose, which previews a creamy but bright mid-palate full of lees, citrus/mandarin, fennel, sea salt and smoke.
