Culmina Family Estate Wild Ferment Gruner Veltliner No. 002 2016

Okanagan Valley, British Columbia, CanadaCulmina has a series of one-off wines from the best of its research and development from any given vintage that they call the Number Series. The second release, Nº 002 Wild Ferment Grüner Veltliner 2016, is made with minimal winemaking inputs, employing only natural yeasts to start a nearly two-month long fermentation. It’s all 6th leaf fruit from Margaret’s Bench. The ferment was 59 days long on the lees in stainless steel barrels. The fermentation stopped naturally at 5.42 g/L of residual sugar adding a gentle flush of sugar to a fresh, well-balanced palate full of savoury, spicy, nutty tones and creamy, yellow fruits.
