Lightfoot and Wolfville Ancienne Chardonnay 2014

Nova Scotia, CanadaLightfoot and Wolfville is one of Nova Scotia's newer wineries, but one of Nova Scotia's pioneering quality grape growers. From Annapolis Valley's glacial till soils, this is three clones of chardonnay, fermented wild and whole bunch pressed before 18 months in French oak, 20 percent new. There were varying levels of solids, depending on the barrel and lot (some 500L wood used here also) and no sulphites at pressing. The affect is a swing of alluring reduction on the creamy, round palate. Concentrated with salted lemon curd, ripe green apple and a textural minerality through the finish.
