Stag's Hollow Renaissance Merlot Stag's Hollow Vineyard 2015
Okanagan Valley, British Columbia, CanadaA 95/5 merlot/cabernet sauvignon mix, all perfectly ripe in 2015. Expect rich, black cherry fruit aromas and flavours in a structured, soft frame. Rich, plummy Bing cherries fill the glass with chocolate, spice and sagebrush that run through a long finish. Youthful but well structured in a style that is drinkable. This will earn extra complexity with three to five years bottle age. Some 50 percent of the berries were left whole and uncrushed. After a 3-day cold soak the wine is fermented and the juice run off. Then the must is lightly pressed to 2/3 new French oak barrels to finish the ferment before ageing undisturbed for 15 months in wood.
